First of all, I apologize in advance because my vocabulary may not be correct to convey certain terms and I really do not feel like looking up words like “casserole” just to learn the exact meaning. OK, I just looked up the word casserole, So I will call this dish “Chris’ Poor Man’s Chicken Casserole”.
Ingredients:
8 Pieces of frozen Chicken Tenders.
2 Packages of Kroger Butter Noodles
2 Packages of Kroger Noodles with Chicken Flavor
4 tsp of butter
8 Cups water.
1 16 oz package of Mild Cheddar Cheese (or choice)
Directions:
Pour 8 cups of water into large pot set to warm temperature. Add butter and let it melt.
Put chicken into pot with water and heat to near boiling. When the chicken is boiling you should have white chicken broth floating to the surface of the water, Take something and scoop out the broth “carefully” not too much but a few scoops with a big spoon should be plentiful, and place the broth into the warming water for the noodle packages then turn the heat on to HIGH.
Once you have scooped out your broth you should be able to start getting the chicken out 1 by 1. The objective here is to get the chicken out,chop it up into small pieces, and put it back into the pot (not the water for the noodles).
Once you have all the chicken chopped up and placed back into the pot, the water for the noodles should be boiling or near boiling, if not wait until it is doing so then add the noodle packages into the big pot of water and stir to avoid clumping.
Once you feel confident that the noodles are not clumped, start to take out the chicken and put them into the noodles (with a spoon with holes preferably because you really do not want to add any more liquid to the noodles than you have to).
After all the chicken is mixed into the noodles, stir occasionally every couple of minutes to avoid burning and to keep the noodles from sticking together.
After about 10 minutes, you should be able to turn the heat off on the noodles and continue every few minutes to stir, You should note the consistency and tenderness of the noodles. If the noodles are not done or soft to your liking please continue to cook them.
After the desired tenderness of the noodles has been reached, pour the noodles into a glass dish, I believe what I use is a 3 Qt. Pyrex dish although I am not positive, I’m a man, I don’t pay too much attention to those details.
Settle the noodles down and pour out evenly the package of cheese on top.
Place into Oven and put on broil for about 2-3 minutes or until desired melting of the cheese is attained.
